Counter Culture is a chef's counter on Sukhumvit 31 with no permanent chef and no permanent menu. We hand our kitchen, our granite counter and our calendar to cooks we admire, from Tokyo ramen masters and Catalan brothers to young Thai chefs on their first solo run, for a few nights at a time. Ten seats a round. Everything is cooked in front of you.

Seatings

    Times are Bangkok time (ICT).
A chef plating a row of dishes on the granite counter under brass heat lamps
    The counter

    No pass. No back room.

A long granite counter with a lit teak ledge, brass heat lamps, and an open kitchen of green tile. Ten guests sit facing the cooks, so the process, the fire and the conversation are all part of dinner.

Between residencies the kitchen works as a co-working space for chefs: a place to test, develop and get ready for the next run.

A new chef every few weeks

Tokyo, Barcelona, Shanghai, Bangkok. Each residency brings its own background and flavours you might least expect. No two visits are the same.

    Ten seats a round

Small enough that the chef cooks, plates and talks to every guest. Rounds are short and fill fast, so book early.

    Stories on a plate

A boxer turned ramen master. A 23-year-old with nine years in the kitchen. Every dish carries the chef's journey, told across the counter.

Counter Culture is a stage for cooks with a point of view. Bring a concept, a story and the will to cook it in front of a full counter. We bring the kitchen, the counter and the guests.
